The healthy autumn recipe you’ve been missing: stewed chicken with chestnuts
São Martinho is coming, but you don’t have to wait until November to eat this fruit. Will repeat this suggestion many times.
Rain, cold, bad weather. When we go out into the street, we already smell the fireplace and whoever smells it quickly remembers chestnuts. During this season there are several ingredients that gain new prominence, but “hot and good” there are only a few. And they are the true stars of autumn.
Roasted or boiled are great, but they are not the only way to include nuts in your diet. Eating it is addictive and now you have even more reasons to do it. Being a source of fiber, minerals and energy, it also has anti-aging, anti-inflammatory and cardiovascular disease prevention properties. 12 chestnuts, without shell – corresponding to 100 grams – have between 185 and 221 calories. But don’t worry, because this fruit has several beneficial properties for health: it is rich in potassium, water, vitamins A, B and E and iron. In addition, there are many healthy recipes with nuts that you can make at home.
The one we bring today will surprise the family in a delightful way. It’s about adding a delicious source of protein to the fruit. The name does not deceive: chicken stew with chestnuts. Imagine a beautiful tenderloin, long and juicy with a wonderful sauce and puree on the side. Who says their mouths didn’t water after imagining the dish.
what do you need
– 1 chicken
– 500 grams of tomatoes
– 4 peeled tomatoes
– 3 cloves of garlic
– 1 onion
— 1 deciliter of port wine
– 4 tablespoons of olive oil
— qb black pepper
– salt qb
how to do
- Start by cutting the chicken into small pieces. Then heat a pan with a drop of olive oil. When hot, add the chicken pieces and cook until golden brown on both sides Peel the onion, garlic and chop everything. Back in the pot, remove the fat from the chicken and add the ingredients you just chopped. Mix and saute until the onion turns golden brown. Add the peeled tomatoes, season with pepper, salt and cook for ten minutes over low heat. Add the peeled chestnuts and the wine. Stir everything, cover and cook for 15 minutes over low heat We recommend that you shake the pan from time to time to mix the ingredients.
Serve warm, accompanied by the puree you like best. Here, too, you can opt for healthier versions, such as cauliflower or carrots.
- When it comes to nuts, the options are immense. Simple ones, like roasted chestnuts with pear and cinnamon, and more complex ones, like chestnut bread with almond bran, oatmeal and linseed. Simply, they are just as good, and they can even be made in the microwave. However, although it is practical and quick to use, some foods should not be heated (or reheated).
