Ingredients

  • 400 g arborio rice
  • 1 medium onion very finely chopped
  • 2 tablespoons of butter
  • 1/2 cup dry white wine
  • 1 and 1/2 liters of chicken broth
  • 4 tablespoons of grated parmesan cheese
  • 200 g broccoli (florets only) (check out 4 tips to know when broccoli is spoiled)
  • 100 g semi-chilled Minas cheese, cut into cubes
  • 1/2 cup (tea) fresh cream milk
  • Salt and black pepper to taste

Method of preparation

  1. Let’s first sauté the finely chopped onion in half the butter.
  2. At this stage it is important not to let the onion brown, but just keep it soft.
  3. Then add the rice arborio and saute for a few minutes then add the white wine.
  4. Let it evaporate over high heat and then start adding the chicken stock little by little.
  5. As the risotto liquid dries up, add more chicken stock.
  6. When you reach half of the sauce, add the broccoli and continue cooking.
  7. Then add the cubed cheese and the cream for another two minutes until the cheese starts to melt.
  8. Then remove from the heat and add the rest of the butter and Parmesan and mix.
  9. Finally season with salt and pepper to taste.
  10. That’s it, the broccoli risotto is ready to be served.

Broccoli risotto cooking tips

  • As for the chicken broth that will be added to the risotto during cooking, ideally, the sauce should be at a temperature close to boiling.
  • By the way, you can use a homemade vegetable broth or the broth from cooking the chicken, which will add even more flavor to the risotto. But if you don’t have it ready, you can dissolve 1 tablet of vegetable broth in 6 cups of boiling water.
